No-Guilt Oatmeal Pancakes

  
To make one large pancake: 

Ingredients: 
- 1/2 Cup Oatmeal (preferably 5 grain or multigrain, because the glycemic index is lower and the different types of grains carry different vitamins and minerals.  I use omega-3 enriched 5-grain oatmeal from Old Wessex).  
- 1/4 Cup Lowfat Cottage Cheese 
- 2-3 Egg Whites 
- Vanilla Extract, Cinnamon, Nutmeg and Clove to taste.  
- Blueberries, Raspberries or Blackberries to taste. 

Combine Oatmeal, Cottage Cheese, Egg Whites and Spices in a food processor and blend until the mixture is moderately smooth.  Stir berries into the mixture.  

Spray a non-stick cooking pan with a healthy spray and form a pancake with the batter.  Cook on low to medium heat until the center of the pancake bubbles, then flip and cook the other side.
