Oatmeal Walnut Cookies

  
About 21 Cookies: 

Ingredients: 
- 2 Eggs, Whipped in a bowl
- 1/4 cup honey (heat briefly to pour easily) 
- 3/4 cup freshly processed apple puree
- 1 cup gluten free Red Mill Oatmeal (after food processor) 
- 3/4 cup Instant Cook Oats, whole 
- 1/4 tablespoon Buckwheat flour 
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda 
- 3 tablespoons fresh pureed ginger
- 1 tablespoon cinnamon 
- 1/4 teaspoon nutmeg 
- 3/4 cup walnuts 

  
Mix Eggs, Honey, Apple Puree and spices.  Then add processed oats, buckwehat flour, baking powder and baking soda.  Mix.  Add instant oats and walnuts.  Drop onto a greased cookie sheet and flatten.  Bake at 375 degrees for 12-15 minutes.
